Chocolate Cut-Out Cookies

Chocolate cookies


  • 1 1/2 cups cashews
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt (omit if the cashews are salted)
  • 1/2 cup cocoa powder
  • 1/3 cup honey

Preheat the oven to 350F.

Place the cashews, baking soda, and salt in a food processor and blend until finely ground. Drizzle in the honey and pulse again until combined.

Gather the dough into a ball and place it on a clean counter or a piece of parchment paper. Place a sheet of parchment paper on top of the dough and roll it out with a rolling-pin until it is 1/8″-1/4″ thick, depending on whether you want them crispy or chewy. You can then cut with fun-shaped cookie cutters or use a small glass for circle cookies. When you run out of room to cut more cookies, gather dough scraps back up into a ball, roll it out again…you know the drill ;).

Place cookies on a parchment lined baking sheet and bake for 8-12 minutes, depending on how thick you made them/what texture you want. Cool, then serve.
